A healthy and delicious,
one pan meal, saves time,
and making clean-up easier.
I warm up leftovers the
next day in the air fryer
390deg for about 15mins,
turning over halfway.
For The Salmon:
3 tablespoons soy sauce
2 tbsp maple syrup
1 garlic clove minced
1 tbsp dijon mustard
1/2 tsp pepper
2 Salmon Fillets
Mix together all of the above,
soy sauce, maple syrup, garlic,
dijon mustard and pepper.
in a shallow bowl.
Place salmon, flesh-side down
in the bowl, covered and
marinate in the refrigerator
for 30 minutes.
For The Vegetables:
3 tbsp. Olive Oil
1/2 tsp each,
dried basil, marjoram,
dill weed, thyme,
oregano, parsley
and salt.
4 potatoes cut into chunks
4 large carrots cut in large pieces.
8 brussel sprouts
1 onion cut in chunks
Preheat Oven to 400 deg. F.
Line a baking sheet with parchment paper.
In a large bowl, combine the olive oil
with all the above spices.
Stir in vegetables until evenly coated.
Place vegetables in a single layer on
a roasting pan or baking sheet.
(oven rack in middle of oven)
Roast for 15 minutes, remove from
oven and turn over the vegetables.
Add the Salmon to the pan
skin-side down.
Bake another 25 minutes
or until salmon easily
flakes with a fork.
