Easter Cupcakes


I made some vanilla cupcakes and

 decorated them for Easter.





 







It's the first time I use these
cardboard containers from Betty Crocker.
Available at the Dollarstore.
They work very well.










Ingredients
1/2 cup butter at room temperature
1 cup white sugar
2 large eggs at room temp.
1 tsp vanilla

1 1/2 cups white flour
1 1/2 tsp baking powder
1/4 tsp salt.

Instructions:

Preheat oven to 350 deg. F.

With an electric mixer, beat the butter until smooth.
Add the sugar and beat until light and fluffy. (3-5 mins)
Add the eggs, one at a time, beating well after each addition. 
Beat in the vanilla extract.

In another bowl, whisk together the flour, baking powder and salt.

With the mixer on low speed,
alternately add the flour mixture and milk, 
into the butter mixture.

Scrape down the sides of the bowl as needed.

Fill muffin containers.




Bake for 20-25 minutes at 350 deg. F.,
or when a toothpick inserted in
the middle comes out clean.  
Cool completely before frosting.
They deflate a little after they cool.




I frosted them with Betty Crocker,  Whipped Frosting .




And they taste as good as they look!!

Quebec Maple Syrup Pie







It's maple syrup time here in Quebec.
Time to taste all the sweet things,
  natures has to offer.








My recipe is adapted from 
ricardocuisine.com

Sometimes I buy store made crust.


Pie Crust

1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt

1/2 cup unsalted butter cold and cubed

3 tbsp ice cold water.

In a large bowl, combine flour, 

baking powder and salt.

Cut butter into flour mixture until 

it resembles coarse crumbs.





Stir in water, until mixture forms a ball.

Roll out about 1/8th inch thickness,
 to fit a 8 or 9 inch pie plate







Filling for the pie
2 tbsp cornstarch
2 tbsp flour
1 1/2 cups maple syrup
1/2 cup 35% heavy cream.
1 egg


Preheat oven to 400 deg. F.
Place oven rack in the lowest position.

In a bowl, whisk together 
the cornstarch and flour.

Add the maple syrup and 
whisk until well combined.

Add the cream and egg and whisk until
 mixture is completely 
combined and smooth.

Pour into prepared pie shell.





Bake at 400 deg for 45 minutes,
until the filling has set.

Cool at room temperature 2 hrs. before serving.




It is great served with ice cream or cream.
