I'm longing for Starbucks lemon loaf,
and I see recipes on the internet.
There's no Starbucks in this region,
so I had to make this copycat
lemon loaf.
It did not disappoint.

Ingredients:
1 1/2 cup flour
1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt, if you use salted
butter, omit the salt.
(Optional zest of 1 lemon.)
1 cup sugar
2 tbsp butter softened
3 eggs
1 tsp vanilla
1 tsp lemon extract
1/3 cup lemon juice
1/2 cup vegetable oil.
Directions
In a bowl, whisk together the flour, baking soda,
baking powder, lemon zest, and salt.
In a larger bowl, use a mixer to blend together the
sugar and butter, add the eggs, vanilla and
lemon extracts, lemon juice and oil.
Pour the wet ingredients into the dry ingredients
and blend until smooth.
Pour batter into a greased 9x5" loaf pan.
Bake 350 degF. (325degF for a glass dish)
for 45 minutes
