My Mom made these often,
with minimal ingredients.
to feed her large family,
They are a favourite of
my grandkids also,
disappearing fast when
they're around.
Great served warm with butter,
also with soup.
Ingredients:
2 cups flour
4 tsp. baking powder
1/2 tsp. salt
1/4 cup butter cut into small pieces.
(If you like the biscuits, more flaky,
use a between 1/4 and 1/2 cups butter.)
1 cup milk.
Preheat Oven to 450 deg.F
In a medium bowl, whisk together flour
baking powder and salt.
Butter
Cut butter into flour mixture
until mixture is a
course crumb texture,
My Mom used her fingers
to mix the butter in
I do also sometimes.
Stir milk into flour mixture
stirring with a fork to
make a soft dough,
(reserving a little, to brush on top of biscuits
about an 8th of an inch of a measuring cup}
Knead lightly for a few minutes.
Roll or pat out to desired
thickness-about 1/2 inch.
Cut out biscuits with a
2 inch cookie cutter.
My favorite glass works well.
Bake 10-12 minutes or
until golden brown
450 deg.F
Delicious right out of the oven, with jam.
Perfect Tea Biscuits should be golden brown
with a fairly smooth, level top.
They should be slightly moist,
tender, light and flaky.
This recipe I took from an old Five Roses Cookbook.
I substituted the shortening for butter.
My other recipes on
baking powder biscuits ~ tea biscuits:
Yogurt replaces the milk.
