Place bread crumbs in a bowl.
Add grated onion to bread crumbs.
Add remaining ingredients except the salmon.
Add salmon leaving large flakes.
Scoop up 1/4 cup mixture or a
packed standard ice cream scoop.
Form/flatten the round cakes about 1/2 inch thick.
Place the cakes on an oiled cookie sheet.
DO NOT press the cakes down on
the cookie sheet. (it will cause them stick)
Brush oil on top of cakes and bake for 15 minutes.
Flip, brush oil over cakes and bake another 10 minutes.
Serve with sour cream or tartar sauce.
I roasted my asparagus in the oven, topped with cheese.
Great on a bun!!

Ohmygosh, we LOVE salmon cakes in this household. I do believe it is my picky eater husband's favorite meal, believe it or not! I never even thought to bake them (DUH!). I always pan fry them in a little butter or margarine. I have to burn a candle when I do (and my husband can't tolerate candles burning, but I can't tolerate the lingering smell of salmon, lol), so I was wondering if baking cuts down the smell, or does it make your oven stink afterwards? I love mustard on mine (I know, weird to some). Great recipe!
Thanks for this recipe:-)) I love salmon and all kinds of salmon variations:-)))
Greetings:-)))
This sure beats my moms old salmon loafs! I would love mine with some garlic aioli! Thanks for stopping by to visit!
