Purple Cabbage Slaw

 I planted red cabbage 
in my old barrel this year
and they grew very well.
The grew larger than I had anticipated.
Actually.... they turned out to be
 purple cabbage.







The red/purple cabbage is a kind of 
cabbage with coloured leaves of 
red or purple. 
The plant changes its colour,
 according to the pH level of the soil
In acidic soils, the leaves grow more reddish,
in neutral soils they will grow more purple.



My sister Annie painted signs on rocks,  for all my vegetables.
Red with purple writing... ironic that the cabbage turned purple.


One grew out of the barrel nearly touching the ground.



I planted two cabbage plants in the barrel.
Cabbage tolerates frost.
 I also planted parsley (to the left) 
and marigolds around.
My parsley always grew well in this barrel.







There are many health benefits in Red/Purple cabbage.

Supports the Immune system,
contains vitamin C,
 fights inflammation 
and arthritis, healthy bones, 
reduces the risk of osteoporosis, 
and vitamin K and  more....









Purple Slaw
To make the slaw I grated the
 cabbage in my food processor.
With approx. 2 to 3 cups of grated cabbage, 
I grated also,  2 carrots and 1/2 red onion.
I added some parsley, pepper and salt.

For the dressing,
 I used store bought coleslaw dressing.
It is so delicious.
I will definitely make it again.






So good and great on hambergers

I also made 



We've had a dry Summer and 
not a good year for growing crops,
 As they say, 2020 sucks.
However, It was an experience planting
 this beautiful and nutritious vegetable.
The highlight of my planting this year.
I'll certainly plant it again.
