Irish Cream Liqueur Bars









The bars are delicious
with a soda bread constituency.
Mixed fruit combined with Irish Cream liqueur.
celebrates everything Irish. 









Ingredients:
1 cup all purpose flour
1 cup whole wheat flour
2 tsp baking powder
3 tbsp sugar
1/2 tsp salt

1/2 cup unsalted butter

1/2 cup candied mixed fruit

(other fruit may be used also.
 I had some candied mixed fruit left 
over from Christmas that I used
 for my fruit cakes)

1/2 cup chopped dried cranberries
1 large egg
1/4 cup Irish Cream liqueur
1/4 cup milk




    Whisk together the flours, baking powder, sugar and salt.



    Cut the butter into the flour.






    In another bowl, mix together the mixed fruit, chopped cranberries, egg, Irish Cream liqueur, and milk. 



Combine both mixtures,  the flour and egg mixture.





Roll the dough, about 1/2" thick, out on a floured surface
 and cut into squares.



Place on a parchment lined cookie sheet.

Bake 425 deg.F for 20-25 minutes.


Let cool on a rack

Glaze
1 cup powdered sugar/icing sugar
3 tbsp Irish Cream (approx)
1 tbsp milk.
Mix the above together with a fork,
it should be thick.

Spoon over bars.
