March has arrived, we're tired
of the snow and longing for Green.
I made this dessert for
St. Patrick's Day this year.
similar to a Grasshopper Pie.
Mint Oreo Cookies and Crème de Menthe
liqueur, a no bake dessert, with minimum
ingredients. How green is that?
Ingredients
1 1/2 cups chopped Oreo Mint cookies.
3 cups mini marshmallows
1/2 cup milk
1/4 cup Crème de Menthe
1 1/2 cups whipping cream
(reserve a little of the whipping
cream for topping)
Put the Oreo cookies, the mint centers also,
in a food processor, mixer, or food chopper
and pulse until they are fine crumbs,
or place your cookies in a baggie and
crush them with a rolling pin.

In a saucepan, melt the marshmallows
with the milk over low heat.
Chill the mixture, stirring it occasionally.
When the marshmallow mix has cooled,
stir in the 1/4 cup Crème de Menthe,
Set aside.
Whip up the whipping cream until soft peaks form.
Fold the whipped cream into the
cooled marshmallow mixture.
(reserve a little whipped cream to place on the top)
Set aside.
Assembling the dessert.
Spread the Oreo mint mixture into the bottoms,
of your dessert dishes, packing it down.
(In the photo, the filling appears more that I put.)
Add the marshmallow mixture on top
of the Oreo cookie mixture, dividing
it evenly into the dishes.
If you like, top the dessert with a dollop
of whip cream and some cherries
or chocolate shaving.
(I used green cherries for
fruit cakes at Christmas. I froze a
few, thinking that maybe I could
use them for St. Pat's desserts and
it worked well for this dessert).
Chill at least 2 hrs. before serving,
giving it time to thicken.

Hi Thelma! I am allergic to mint but your dessert certainly is pretty! I love green and although my hubby and I are staying away from sugar as much as possible these days, I may break down and make a pistachio dessert for St Patricks Day. I am tired of winter too. March always makes us long for green grass and flowers. A few more weeks, the snow will be gone for another year. I hope you and your sister are staying well, Thelma.
