Banana Muffins are full of Nutritious Value.
Ingredients:
1 1/4 cups All-Bran Cereal
3/4 cup milk
1 cup all-purpose flour
1/2 cup brown sugar
1/4 cup cocoa powder
1 tbsp baking powder
1/4 tsp each baking soda and salt
1 egg
1/4 canola oil
3 large ripe bananas mashed.
Preheat Oven to 400F
Combine cereal and milk in a medium bowl and
let soften for 2 minutes.
In a large bowl, combine flour, sugar, cocoa,
baking powder, baking soda and salt.
Beat egg, oil and mashed bananas into cereal mixture.
Stir into dry ingredients until just combined.
Fill muffin pans.
Top with a few chocolate chips.
Bake for 15 to 20 mins.
Enjoy, they are delicious...
tip: The secret of good muffins is to stir the batter until the flour is just dampened.
The batter should be lumpy. Overmixing causes tunnels and a tough texture.
Perfect muffins are light and tender with rough shiny golden crusts.
