Peach Buckle

 I had peaches that were getting too ripe and 
decided to cook them up before I lost them.

A "Buckle" is an old fashioned dessert. 
A cross between a cake-like cobbler, 
a crisp and a fruit crumble. 

 A simple dessert  to use with any
 Summer fruit, and delicious to eat.




Ingredients:

1/2 cup butter
3 or 4 ripe peaches, washed and sliced 1/4 thick.
1/2 cup plus 2 tbsp. granulated sugar

1 cup all-purpose flour
2 tsp baking powder
a pince of salt.

1 cup Unsweetened Almond milk.
(Other milk, dairy milk may be used also),


Directions:

Preheat over to 350deg. F

Place the 1/2 cup butter in a baking dish 
and place in the oven to melt while the
oven is preheating.

Slice peaches approx. 1/4 inches slices, 
with skin on and discarding the pit.
Place peaches in a medium bowl 
and sprinkle with 2 tablespoons of sugar.



In another bowl, whisk together flour, 
baking powder and salt and 1/2 cup sugar.

Whisk in the milk and melted butter.



Pour into baking dish and top with peaches.

Sprinkle with cinnamon.


Bake  50 - 55 minutes,
until top is browned and a toothpick
 inserted in centre comes out clean.



Serve warm or at room temperature with
whipped cream, or ice cream.
