Pumpkin Pie


An easy and fast pie to put 
together for Thanksgiving.
(I posted this blog in 2020.)
Because of this coronavirus
we cannot gather this Thanksgiving.
The number of cases are 
growing in this community.
We are in the second wave and must 
stay at home to protect ourselves and others.

 


 

I made these pies with
sweetened condensed milk. 
Only 3 ingredients, plus spices
 makes this delicious pie.
I use homemade pumpkin puree.
Store bought can puree, with no spices may
 be used for this recipe also.
This recipe will make one 9 inch pie.
Since I cannot have family for
 this Thanksgiving dinner,
I made 2 small pies in 7 inch pie pans.






Prepare your favorite the pie crust.
I use an all vegetable shortening. 
Easy instructions on the box.
Or, you can buy premade pie crust in grocery stores.




Ingredients for the pie filling

2 cups of pumpkin puree
1 can sweetened *condensed milk
2 eggs
1 tsp cinnamon
1/2 tsp nutmeg
1/2tsp ginger
(I leave out the ginger because of allergies)
1/2 tsp salt


Preheat oven to 425deg. F

Whisk together the pumpkin puree,
 milk and eggs.

Add in the spices.

Fill unbaked pie shells.

Bake at 425deg. F for 15minutes.
Turn down over to 350deg. F and
bake for an additional 35-40 minutes.


To test for doneness, insert a knife, 1 inch from crust.
If it comes out clean, you pie is done.



*Condensed milk
 is cow's milk which water 
has been removed, (roughly 60% of it). 
It is most often found with 
sugar added, in the form of 
"sweetened condensed milk"
 to the extent that the terms "condensed milk " 
and "sweetened condensed milk" are often 
used interchangeably today. 
Sweetened condensed milk is a very thick, 
sweet product, which when canned 
can last for years without refrigeration 
if not opened.
