A great comfort food to enjoy.
Delicious with rice, noodles or potatoes.
Delicious with rice, noodles or potatoes.
Because of the pandemic, (2020),
I miss the Swedish Meatballs at Ikea.
Here is my own version.
Served on eggs noodles
Ingredients:
1 medium onion finely chopped
1 large egg
1/2 cup breadcrumbs, or
(sometimes I used crushed soda crackers)
2 tbsp milk
1/2 tsp salt
1/2 tsp ground pepper
1/4 tsp ground nutmeg
1/8 tsp ground allspice
1 lb. ground beef
(If you have ground pork on hand,
use 3/4 lb. ground beef and 1/4 lb.
of ground pork.)
Sauce
1 tbsp butter
1/4 cup flour
4 cups beef stock
Optional) 1 tbsp whiskey or cognac
(parsley to garnish)
Heat olive oil or vegetable oil
in a large skillet
over medium high heat.
Add the onions, reduce heat to medium
and cook until softened.
Set the onions aside to cool
In a large bowl beat egg, stir in milk, salt,
pepper, nutmeg and the allspice until combined.
Add cooled onion.
Mix in bread crumbs and stir in the
ground beef.
Form the mixture into 1 to 1 1/2 inch balls.
Heat more oil in the
skillet over medium heat and carefully
place the meatballs into the pan.
Brown and cook the meatballs on all sides,
Transfer the meatballs to a warm platter.
Drain off all but 1 tbsp of fat from the
skillet and return to the heat.
Add butter and allow to melt.
Add the flour to the pan and whisk
until the sauce begins to thicken.
Whisk in the beef stock and continue
to cook until the gravy has thickened.
(Optional) stir in the whiskey.
Return meatballs to the pan and
simmer until heated through.
Serve with egg noodles and
garnish with parsley.
Delicious

I haven't had homemade Swedish meatballs in so long. Pinning so I can add to my list to make. Visiting from Tuesdays at our Home.
