Easter Cupcakes

I made some vanilla cupcakes and

 decorated them for Easter.


It's the first time I use these
cardboard containers from Betty Crocker.
Available at the Dollarstore.
They work very well.

1/2 cup butter at room temperature
1 cup white sugar
2 large eggs at room temp.
1 tsp vanilla

1 1/2 cups white flour
1 1/2 tsp baking powder
1/4 tsp salt.


Preheat oven to 350 deg. F.

With an electric mixer, beat the butter until smooth.
Add the sugar and beat until light and fluffy. (3-5 mins)
Add the eggs, one at a time, beating well after each addition. 
Beat in the vanilla extract.

In another bowl, whisk together the flour, baking powder and salt.

With the mixer on low speed,
alternately add the flour mixture and milk, 
into the butter mixture.

Scrape down the sides of the bowl as needed.

Fill muffin containers.

Bake for 20-25 minutes at 350 deg. F.,
or when a toothpick inserted in
the middle comes out clean.  
Cool completely before frosting.
They deflate a little after they cool.

I frosted them with Betty Crocker,  Whipped Frosting .

And they taste as good as they look!!

What a happy time here in the kitchen Thel! I love this. Your cupcakes are wonderfully "Easter"! You mentioned planting foxgloves in your comment. A foxgloves is a biennial and the first year they come up as a plant only. The second year they bloom and they do make "babies" which can become new 1st year plants. They can be pinched off and rooted in root element. You can grow them from seed. Most people just buy the plants but if they are blooming they are in year #2.

Dear Thelma..I love visiting your kitchen ... I smell such delicious goodies cooking... Your cupcakes look yummy and they are so sweetly displayed in those nifty cupcake containers which look to be alittle taller than most cupcake papers... I must look for them. Decorating is the most fun, especially the sprinkles( ha ha). SO pretty!!... Thanks for the recipes Thel... Have a wonderful week...Hugs
