Lemon Loaf

     If you are a lemon lover, you'll love Lemon Loaf. 
Delicious served warm or cold.
 Serve it for breakfast or for an afternoon snack.


1-1/2 cups all-purpose flour

1/2 tsp salt

1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup butter, softened
1 cup sugar
2 eggs
1 tbsp grated lemon zest
1/3 cup milk
the juice of a lemon

In a large bowl cream together butter & sugar
Add eggs, one at a time, beating until creamy
blend in milk
  • In another bowl, mix together flour, salt, baking powder, baking soda  and lemon rind.
  • Pour into batter
  • Stir to moisten
  • 1/4 cup sugar
  • the juice of a lemon
Put in pan (for this recipe today, I used 3 mini pans and cooked them approx 45 mins.)

Bake 350 degrees
*While it is cooking mix together the Glaze.
*Loaf is cooked when toothpick inserted in middle comes out dry.

*Cool loaf in pans for 5 mins.
*Remove to rack while still hot.
*Pick holes in the loaves with toothpick and brush or pour over glaze.
