Frozen Berry Pie
rozen berries are a great alternative to fresh for winter baking.
You don't need to thaw your berries before cooking,
a slightly longer baking time is needed.
This recipe yields 2 pies as in the photo above.
(2 pounds) mixed frozen berries
cornstarch or Tapioca
fresh lemon juice
unsalted butter, cut into small pieces
One pie crush recipe. I use Crisco All-Vegetable Shortening.
Preheat the oven to 350
. In a large bowl, toss together the frozen berries, sugar, cornstarch (or Tapioca) and lemon juice.
Unroll pie crust into one 10 and 7 inch plates.
Pour the fruit mixture into the crust and dot with the butter. Cover top with pie crust.
Cut 3 slits in the center of the crust.
Mix together the egg yolk and cream and brush onto the pie. (optional)
Bake for 30 minutes at
