No Sugar Banana Muffins

Today I made  healthy, Banana Muffins. 
 Sugar is replaced with Apple Sauce and Honey



tip:
The secret of good muffins is to stir the batter until the flour is just dampened.
The batter should be lumpy. Over mixing causes tunnels and a tough texture.
Perfect muffins are light and tender with rough shiny golden crusts.

    Recipe:
2 cups Whole Wheat Flour
1 tsp. Baking Soda
1/4 tsp. Salt
1/2 cup unsweetened Apple Sauce (I use one small container of Motts)
3/4 cup Honey
2 Eggs beatened
3 mashed overipe Bananas
(walnuts optional)
     
Combine Flour, Baking Soda, and Salt.
In a separate bowl mix together Applesauce, Honey,
 Eggs and Mashed Bananas.
Sir with flour mixture just until moistened.
     Bake 350 degrees 
 for about 20 mins. Convection 18 mins.
 (I made 16 medium muffins)....
   *This recipe can also be used for Banana Loaf. bake for 60-65 mins.
