Fiddlehead Omelette

This delicious omelette 
is very nutritious 
and easy to make

Recipe makes 2 Omelettes

Delicious







Ingredients

  • 4 tsp butter
  • 1-1/2 cups fresh fiddleheads, brown papery cover removed (or 1 pkg/250 g frozen fiddleheads, thawed and drained)
  • 1 clove garlic, minced
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 6 eggs
  • 1 tbsp milk or water
  • 1 tbsp chopped fresh chives

  • In a nonstick skillet, melt half of the butter over medium-high heat; sauté fiddleheads, garlic, and a pince of salt and pepper until tender-crisp, about 3 minutes. Transfer to bowl; set aside.
Melt 1 tsp of the remaining butter in same skillet over medium heat. In bowl, lightly beat together eggs, milk and remaining salt and pepper; pour half into skillet and cook, gently lifting edge with spatula to let uncooked eggs flow underneath, until almost set, about 3 minutes.
Sprinkle half of the fiddlehead mixture over half of the omelette; fold uncovered half over top and cook for 1 minute. Slide onto plate; keep warm. Repeat with remaining ingredients.
Sprinkle with chives.

Variation:
Fiddlehead and Cheese Omelette: Sprinkle 2 tbsp shredded cheese (such as Gouda or Swiss) over fiddleheads before folding omelette

Frozen Berry Pie

 .
Frozen berries from the freezer

are great for Winter baking.

No need to thaw your berries before baking.

A slightly longer baking time is needed.



  •   

Yields one each 10 inch
 and one 7 inch pie.
Or two 8inch pies.

Ingredients

  • cups (2 pounds) mixed frozen berries
  • 1/2 cup sugar
  • 1/4 cup cornstarch
  • tablespoon fresh lemon juice

  • tablespoons unsalted butter,
  •  cut into small pieces

  • One pie crush recipe.
  •  I use Crisco All-Vegetable Shortening
  • and follow the instructions on the box.



  • Directions:

  • Preheat the oven to 350deg. F.

  •  In a large bowl,  toss together the frozen berries,
  •  sugar, cornstarch and lemon juice 

  • Unroll  pie crust into the pie plates 

  • Pour the fruit mixture into the crust 
  • and dot with the butter.

  •  Cover top with pie crust.
  •  Cut 3 slits in the center of the crust.

  •  

  •  Bake for 30 minutes at 350deg.F
  • then increase the heat to 375 deg.F. 
  • and bake until the crust is nicely browned,
about 20 minutes longer.

Crock Pot Maple Syrup Black Forest Ham


It is Maple Syrup Season here in Eastern Canada.  What tastes better than a Ham cooked in Maple Syrup..



My recipe is for a small Crock Pot.

ingredients:
One low fat  Black Forest Ham
-800 gr.
1/2 cup Maple Syrup
2 potatoes
Parsley
Pepper

To cut down on Sodium, I boil my ham in a deep pot for a few minutes and drain.
Spray your Crock Pot with Pam. It will be easier to clean after.

Cut 2 medium potatoes in slices and put in the bottom of the Crock Pot.
Then I sprinkle them with Parsley and Pepper. (salt if you desire)
Place Ham on top, pour Maple Syrup over Ham
Cover and cook 4 1/4 hrs. 
Delicious......

Kale And Spinach Vegetable Soup



This soup is delicious. 
Kale and spinach are recognized
for their nutrient richness and health benefits.






I used 1/2 bag each of these frozen chopped kale and spinach.


  
 

Ingredients:
4 cups chicken or vegetable stock
1 can tomato soup 284ml.
1/2 large onion chopped 
2 celery stocks diced

3 Parsnips diced 
3 Carrots diced
1 small white Turnip diced

2 Potatoes diced.

About 2 cups of each chopped
 kale & spinach, rinsed.


Instructions:
Add the chicken or beef stock  
with the tomato soup, 
in a large pot.
 Add the chopped onion
 and chopped celery,
 bring to a boil.

 Meanwhite dice up the parnips,
 carrots and turnip.
Salt and pepper to taste. 
Add to pot.
Bring to a boil and simmer 1/2 hr.


 Add potatoes and simmer 15 more minutes.
When all the above vegetables are tender,
add the kale and spinach
 simmer 10 minutes more.

 You may have to add more water 
to make it the right consistency
 to suit your taste.

For more protein, sometimes I add
a can of large beans.

No Sugar Banana Muffins

Today I made healthy, banana muffins. 
 Made with whole wheat flour,
 and sugar is replaced with 
apple sauce and honey.



tip:
The secret of good muffins is to stir the batter until the flour is just dampened.
The batter should be lumpy. Over mixing causes tunnels and a tough texture.
Perfect muffins are light and tender with rough shiny golden crusts.

    Ingredients

2 cups whole wheat flour
1 tsp. baking soda
1/4 tsp. salt
1/2 cup unsweetened apple sauce (I use one small container of Motts)
3/4 cup honey
2 eggs beatened
3 mashed overipe bananas
(walnuts optional)
     


Whisk together the flour, baking soda, and salt.
In a separate bowl mix together applesauce, honey,
eggs and mashed bananas.
Sir with flour mixture just until moistened.
Bake 350 degrees for about 20 mins. 
 (I made 16 medium muffins)....


   *This recipe can also be used for Banana Loaf. bake for 60-65 mins.

Banana Bran Muffins

These Delicious Bran, 
Banana Muffins are full of Nutritious Value. 



This will make 12 large muffins or 15 medium muffins....

Ingredients:
1 1/4 cups All-Bran Cereal
3/4 cup milk 
1 cup all-purpose flour
1/2 cup brown sugar
1/4 cup cocoa powder
1 tbsp baking powder
1/4 tsp each baking soda and salt
1 egg
1/4 canola oil
3 large ripe bananas mashed.


Preheat Oven to 400F

   Combine cereal and milk in a medium bowl and 
let soften for 2 minutes. 
   In a large bowl, combine flour, sugar, cocoa,
 baking powder, baking soda and salt.
   Beat egg, oil and mashed bananas into cereal mixture. 
Stir into dry ingredients until just combined. 
  Fill muffin pans.
   Top with a few chocolate chips.


Bake for 15 to 20 mins. 
           Enjoy, they are delicious...

Cinnamon Rolls


No yeast in these Cinnamon Rolls,
A favourite with my family






Ingredients:

3 cups flour
1/4 tsp salt
4 tsp. baking powder
1/2 cup sugar

2 eggs at room temperature, beaten
3/4 cup milk at room temperature.
1/2 cup melted butter 

(Brown Sugar spread mixture)
1/2 cup brown sugar
1/4 cup melted butter
3 tbsp. cinnamon


Directions

Preheat Oven to 375 degrees

 Make the brown sugar spread mixture 
and refrigerate, to let it thicken,
making it easier to spread on the dough.
In a small bowl,
mix together the brown sugar, 
melted butter and cinnamon.
Place in the refrigerator to cool.




In a large bowl, whisk together 
flour, salt, baking powder and sugar.


In a small bowl whisk the eggs,
 milk and melted butter together.


Combine both bowls together,
the ( flour and egg mixtures) 

 Mix together to make a soft dough
Knead lightly approx. 10 times.



Roll into a rectangular shape approx. 12" by 16"



Spread Brown Sugar spread 
mixture over dough.
(I use a spatula to spread it)

Roll up dough as for jelly roll, 
seal edges. 

Slick 1/4 -1/2 inch slices.




Bake in oven 375 degrees for approx. 15-20 mins,
or a little longer, if you want them browner.

Lemon Loaf


 If you are a lemon lover,
you'll love Lemon Loaf. 
Delicious served warm or cold.
Serve it for breakfast or
for an afternoon snack.




















Preheat oven to 350 deg. F


Ingredients:


1 1/2 cups flour
1/2 tsp salt
1/4 tsp baking powder
1/4 tsp baking soda
Grated rind of one lemon.


1/2 cup butter softened

1 cup sugar
2 eggs
1/3 cup milk.



In a large bowl, whisk together
 1 1/2 cups flour,  1/2 tsp. salt,
1/4 tsp. baking powder, 
 1/4 tsp. baking soda and lemon rind.


In another bowl, with a mixer, 
blend together 
1/2 cup softened butter 
with the cup of sugar.

Add the two eggs, one at a time,
 beating until creamy
add the 1/3 cup milk


Combine the 2 batters together. 

Pour in pans
I used 3 mini pans 

Bake at 350 deg. F
for approx. 45 minutes
Loaf is cooked when toothpick 
inserted in middle comes out dry.

Cool loaf in pans for 5 mins.
Remove to rack while still hot.



Lemon Glaze
1/4 cup sugar
the juice of a lemon

Pick holes in the loaves with a
 toothpick or fork and brush or
 pour the glaze over the loaf.
