Honey Nut Date Loaf


Chocolate chips
added for extra flavour.
Moist and full of nutrition.
Great with afternoon tea
or dessert.








Ingredients:

3/4 cup dates
1 cup all purpose flour
1 teaspoon baking soda
3/4 teaspoon cinnamon
1/2 tsp. salt
pinch of nutmeg
1/2 cup brown sugar

3/4 cup of vegetable oil. (canola can be used also.)
1/4 cup honey
2 eggs
1 tsp. vanilla

1/2 cup chopped walnuts (I used pecans)
3/4 cup chocolate chips.

Directions:
Preheat oven to 325 deg. F
Grease a loaf pan

Place dates in a bowl and cover them with very hot water
Let the dates soak while you prepare the cake batter.

In a large bowl add the flour, baking soda, cinnamon, salt,  nutmeg and brown sugar.





In another bowl, whisk together the vegetable oil, honey, eggs and vanilla.

Combine the wet ingredients with the dry ingredients and stir until a batter is formed.

Drain the dates and chop into small chunks.
Fold dates into batter

Coat walnuts and chocolate chips with 1 tsp. of flour
and fold into batter.

Place batter in loaf pan

Bake about 1 hr. or until a toothpick inserted in the centre
 comes out clean.
The aroma coming from the kitchen while 
they are baking is absolutely divine.
Remove from oven and set on a wire rack to cool
