Cameo Cherry Cupcakes




Delectable treats for Mother's Day











I made these cherry cupcakes,  decorated 
with cameo chocolates for Mothers Day.

If you like cherries,
 you'll LOVE these cupcakes.

I got this recipe from an old Five Roses cookbook.
 A cake recipe,  that I adapted for cupcakes.
 Yields 11 large cupcakes,
or 12 medium cupcakes.



Ingredients:

1 1/2 cups flour
2 tsp baking powder
1/2 tsp salt

1/3 cup butter
3/4 cup sugar
2 eggs

 1/4 cup milk
1/4 cup cherry juice

1 cup maraschino cherries, sliced in half.


Whisk together the flour, baking powder and salt.
Toss the cherries in a tbsp of flour 
and add them to the flour mixture.


With a mixer, cream the butter and sugar, adding the eggs.


Combine the cherry juice and
 milk together in a measuring cup.

With a wooden spoon, mix the flour
 and butter mixes together, 
 alternately, with the milk and cherry juice.
Do not overmix, as it will cause tough cupcakes.






Fill the muffin paper lined pan. 
An ice cream scoop works well to fill the pans,
or use 2 spoons. 


Bake about 20 minutes or 
when a toothpick inserted in 
the middle comes out clean.


There're not only pretty,
They're pretty delicious!!





For the frosting, I used Betty Crocker Whipped Frosting.
added 2 tsp. cherry juice and 1 drop of red food colouring.
I decorated the middle with cameo chocolates.
I'm not a pro at decorating with frosting.

These are BEAUTIFUL! So appropriate for Mother's Day. I have never seen cameo chocolates before, but I absolutely love them and will be on the lookout in the future. They would be darling mini cake toppers at a ladies tea.
