Savour the flavours of
Autumn with these
Pumpkin Chocolate Chip Cookies.
A soft cookie enhanced
with Chocolate and Orange flavour.
Recipe yields 3 doz. cookies.
Ingredients
2cups flour
1 1/4 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp salt
2 large eggs at
room temperature
1 1/4 cups brown sugar
1/4 cup vegetable oil
1 tsp pure vanilla extract, or
(orange extract, if you have it.)
1/2 to 1 cup chocolate chips.
(nuts can also be substituted
for the chocolate chips.)
1 cup pumpkin puree
I used canned puree for this recipe.
Instructions
Preheat oven to 325 deg.F.
In a large bowl,
whisk together the flour,
baking powder, baking soda,
cinnamon, nutmeg, and salt.
In a bowl with any electric mixer,
beat the eggs and sugar until
light and smooth, about 2 minutes.
Add in the oil, vanilla
(or orange extract)and
the pumpkin puree.

Add the flour mixture and beat
just until they are mixed together.
Fold in the chocolate chips.
Using a small scoop or tablespoon,
place small mounds of batter onto
the prepared baking sheets,
spacing about 2 inches apart.
Bake about 13-15 minutes or until
a toothpick inserted in the centre of
the cookie comes out clean.
Remove from the oven and
transfer to a wire rack to cool
completely before frosting.
For the Frosting/Glaze
In a small bowl,
mix 2 cups of powdered/
icing sugar,
(I sift the icing sugar to
eliminate lumps)
2 tablespoons water
2 tbsp of orange extract.
(If it is too thin, add more
icing sugar, too thick,
add more water)
Spread glaze on tops of cookies,
sprinkle with candies to decorate.
