Quebec Maple Syrup Pie







It's maple syrup time here in Quebec.
Time to taste all the sweet things,
  natures has to offer.








My recipe is adapted from 
ricardocuisine.com

Sometimes I buy store made crust.


Pie Crust

1 1/4 cups flour
1/2 tsp baking powder
1/2 tsp salt

1/2 cup unsalted butter cold and cubed

3 tbsp ice cold water.

In a large bowl, combine flour, 

baking powder and salt.

Cut butter into flour mixture until 

it resembles coarse crumbs.





Stir in water, until mixture forms a ball.

Roll out about 1/8th inch thickness,
 to fit a 8 or 9 inch pie plate







Filling for the pie
2 tbsp cornstarch
2 tbsp flour
1 1/2 cups maple syrup
1/2 cup 35% heavy cream.
1 egg


Preheat oven to 400 deg. F.
Place oven rack in the lowest position.

In a bowl, whisk together 
the cornstarch and flour.

Add the maple syrup and 
whisk until well combined.

Add the cream and egg and whisk until
 mixture is completely 
combined and smooth.

Pour into prepared pie shell.





Bake at 400 deg for 30 minutes
Lower heat to 375 deg. F and
bake for an additional 30 minutes.


Cool at room temperature 2 hrs. before serving.




It is great served with ice cream or cream.

Thelma, even though I love the taste of maple syrup, the main reason I want to make this pie is because of my husband's Quebec heritage. Hope to make it soon.
