Cinnamon Roll Muffins
Cinnamon rolls are a favourite
with my family, especially Grandkids.
I get asked to make them often.
For a change, I decided to bake
them as muffins and add some walnuts.

Ingredients:
3 cups flour
1/4 tsp salt
4 tsp baking powder
1/2 cup sugar
2 eggs at room temperature, beaten
3/4 cup milk at room temperature
1/2 cup melted butter cooled
(Brown Sugar spread mixture)
1/2 cup brown sugar
1/4 cup melted butter
3 tbsp. cinnamon
1/2 cup chopped walnuts.(Optional)
Raisins, currants or other nuts may be used also.
Directions:
Preheat Oven to 375 degrees.
Make the brown sugar spread mixture
and refrigerate, to let it thicken,
making it easier to spread.
In a small bowl,
mix together the brown sugar,
melted butter and cinnamon.
Place in the refrigerator to cool.
In a large bowl, whisk together the flour,
salt, baking powder and sugar.
In a smaller bowl,
whisk together the eggs,
milk and melted butter.
Combine the egg mixture with the
flour mixture to make a dough.
knead about 10 times.

Roll dough out approx. 12'by16"
Spread the brown sugar spread
mixture with a spatula on top.
Sprinkle the chopped walnuts. (optional)
Roll up to form a log.
I sliced them about 3/4 inch thick,
yields 22 muffins.
For a larger muffin,
slice 1" thick.
I press some walnuts in the top of the muffin
(I love walnuts)
Place in greased muffin tins.
Bake at 375 deg. for approx. 20 minutes.

Orange Smoothie
This healthy smoothie,
low in calories,
high in Vitamin C, and
high in Vitamin C, and
will give you a burst of energy.
Combine 2 cups orange juice,
1 cup frozen yogurt
2 tbsp honey
1 tsp pure vanilla extract.
Blend until smooth.
Garnish with orange slices.
Pour into serving glasses
and enjoy.

Valentine Bark
For the sweetest day of the year,
why not make some bark.
So fast and easy to make,
no baking involved,
with only two ingredients
and some candy for decoration.
The ingredients I used.
Graham Wafers,
Candy Melts
(or white chocolate chips)
and candy decorations.
I found these little chocolate
hearts in Korvette's store.

Candy sprinkles
I lined my pan with parchment
paper, then the wafers.
I had to cut one wafer to fit.
With a surrogated knife,

they cut well.
Melted the Candy Melts
in the microwave.
About 1 minute.
Spread it over the wafers.
Add the candy decorations.
I put it in the refrigerator to harden.
About 15 minutes.
I cut/broke it with a large knife
and a rubber mallet.

Kids will love these,
in little baskets
from the Dollarstore.
A nice treat
