Irish Soda Bread

There's no yeast in this quick bread.
So you'll be enjoying a loaf of fresh
baked homemade bread in no time.
The acid in the buttermilk reacts 
with the baking soda to provide 
the bread's leavening.



  • 3 1/4 cups flour
  • 1/3 cup Sugar
  • 1 tsp. Baking Powder
  • 1 tsp. Baking Soda
  • 1 tsp. Salt
  • 1/2 cup Cold Butter - cut up
  • 1 1/3 Cups Buttermilk
  • 1/2 cup Currants

  • This recipe makes 2 loafs

 PREHEAT Oven to 375deg.F

Mix flour, sugar, baking powder,
  •  baking soda and salt in large bowl. 
Cut 1/2 Cup of Butter in Chunks

  • Cut  butter in flour

Stir in Currants

Add 1 1/3 cup  Buttermilk to the flour mixture
Stir just until mixed

Kneel lightly

Cut Dough in 2 Pieces

 Shape into (2-1/2-inch-thick) rounds
 Cut deep 1/2-inch "X" in top of dough; 
sprinkle with 1 tbsp Sugar

  •  Place on baking sheet sprayed with cooking spray

Bake 1 hour until Golden Brown
Remove from baking sheet 
and allow to cool on wire rack;

To make buttermilk,(If you don't have any on hand)
Stir 1 tbsp. vinegar or lemon juice
into 1-1/3 cups 2% milk
Let stand 5 min.


I also made this bread with 1/2 whole wheat flour
instead of sprinkling sugar on the dough, I brushed
it with Buttermilk.
