Christmas Cookies

Colourful Christmas Cookies
to enjoy any time of the year.

Yummy Cookies-ready for the Oven

2  1/4 cups flour
1/2 tsp baking soda
1/2 tsp salt
1 cup unsalted butter at room temp.
1 cup icing sugar
1/2 cup granulated sugar
1 egg
2 tsp vanilla
1/2 cup raisins
1/2 cup each red and green cheeries. (About 15 of each.)

Stir together flour,baking soda and salt
Put butter in a large bowl, with mixer gradually beat in both sugars until mixture is light. (approx 2 mins)
Beat in egg, then vanilla.
Stir in flour mixture, raisins and cherries.

Divide dough in 3 portions. If soft, refrigerate 10 mins.

Place each on a large piece of plastic wrap or waxed paper.
Shape into a log about 12 in. long.
Wrap in plastic and refrigerate until firm at lease 4 hrs. or up to 5 days, or freeze for up to 1 month.
When ready to bake, preheat oven to 350 degrees.
 Using a serrated knife, slice cold dough in 1/4 inch thick rounds. 
Place on a lightly greased baking sheet or a parchment lined cookie sheet. 
Bake 7 to 10 mins, until edges are golden.

Makes 8 dozen cookies.
