Mocha Muffins

If you like mocha,
you'll love these mocha muffins.

A great flavour of coffee
and chocolate...
Also plain and
 whole wheat flour,
adds texture and fibre.

 All mixed together by hand,
in 3 easy steps.
No mixer needed.
Yields 12 large muffins.

Recipe adapted from "The Joy Of Baking"



Wet Ingredients
2 large eggs
1/2 cup buttermilk
(I used Almond milk that I had on hand) 
1/2 cup vegetable oil
1/4 cup (strong) black coffee or
 espresso at room temperature
1 tsp pure vanilla extract

Dry Ingredients
1 cup all purpose flour
3/4 cup whole wheat flour
1/4 cup unsweetened cocoa powder
1 cup brown sugar
1/2 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1/2 cup coarsely chopped walnuts or
 any kind of nuts you have on hand.
1 cup chocolate chips

Preheat oven to 375 deg. F.
Whisk all the wet ingredients in a medium bowl.

Whisk all the dry ingredients in a large bowl

Combine the wet and dry ingredients
Do not overmix, as this will result in tough muffins.

Fill paper lined muffins tins.

Bake 20-25 minutes. Or until a toothpick inserted in the middle comes out clean.

Cool on a wire rack.
