Aunt Ruby's Currant Tarts




(raisins, walnuts or pecans
may be substituted for currants. )



The last time I visited my Aunt Ruby, 
I was treated to these delicious tarts.
I am thankful to have her recipe.
Making them brings back fond memories
of this wonderful Aunt and a
beautiful lady. 



Tart Filling:...(makes 1 doz. tarts)



1 cup brown sugar
2 eggs
1 tsp. vanilla
1 tablespoon vinegar
1 tablespoon melted butter.
1/2 cup currants.

12 tart shells








Mix all the ingredients together 





Fill uncooked pastry tart shells.
(I use an ice cream scoop to fill the shells.)
I put some of the currants in the 
bottom of the shells before filling.







Bake 450 deg. - 8 mins, then
          350 deg. 15-20 mins.
