Pure Maple Cupcakes

It's maple sugar time 
here in Eastern Canada.
 I made these maple muffins and decorated them
 with walnuts, making a little nest to hold a tiny egg.




Pure maple syrup is made from the sap of our maple trees.





Ingredients:
2 1/2 cups all purpose flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp cinnamon
1/2 cup walnuts or pecans.

1/2 cup butter, slightly softened
1/2 cup brown sugar
2 eggs
1 1/4 cup pure maple syrup
2 tsp. vanilla or maple extract

1/2 cup milk (or buttermilk).



Heat Oven to 325 deg. F.

In a medium bowl, whisk together the flour, 
baking powder, baking soda, salt and cinnamon. 
Stir in the walnuts.


In a larger bowl with a hand mixer, or a stand mixer, 
cream the butter and brown sugar together, until fluffy.
Add the eggs, maple syrup and vanilla, 
 mix until well combined, 


 Stir the flour in the liquid mixture by 
thirds alternating with the milk.
until combined. 





Line 16 cupcake/muffin pan with cupcake liners. 
Fill each 3/4 full.
An ice cream scoop works well for filling









 Bake 20-25 minutes 
until a toothpick inserted in the center
 of a cupcake comes out clean.

Allow to cool in the pans for 15 minutes, 
then remove the cupcakes to
 a wire rack to cool completely. 



Once the cupcakes are completely
cooled, they can be frosted.

I frosted them with 
a buttercream maple frosting, 
and with Easter coming soon, 
I decorated them with walnuts and 
mini eggs,
(I used Cadbury mini eggs).
