Old Fashioned Molasses Muffins with Currants


Molasses is a product resulting from refining sugarcane into sugar.  Sugarcane molasses is primarily used for sweetening and flavouring foods.  Molasses is a defining component of fine commercial brown sugar. It is also one of the primary ingredients used for distilling rum,
and beer.  It has several health benefits including magnesium, iron potassium and calcium.  (from Wikipedia)  






Growing up in rural GaspĂ©, 
 I remember the local store nearby
 (Rock Aubin's, no longer exists today)
used to get molasses in large barrels.
The clients brought their jars and
filled them up. 

My Mom used it in a lot of baking.
including her huge molasses cookies
and baked beans.
My favourite still is, molasses on my
hot porridge (oatmeal) for breakfast.


This muffin recipe, is simple and easy.
I adapted from tasteofhome.com

Preheat Oven to 325 deg. F.

Prepare you muffin pan with
paper liners or grease the pan.
Yields 8 large muffins or
12 medium.


In a large bowl, whisk together
1 1/4 cups flour, 
1/4 cup sugar, 
1/2 tsp baking soda,
1/2 tsp cinnamon
and 1/2 tsp nutmeg
Ginger (optional)
  also, a pinch of salt.


In a smaller bowl whisk together,
1 egg
1/2 cup water
1/4 cup vegetable oil
and 1/4 cup molasses.


Combine the 2 bowls above 
and add in the currants or raisins.



Fill the muffins prepared pan.

3/4 full for 8 large muffins.



Bake 325deg. F.
for about 25 minutes or
when a toothpick inserted
in the center of a muffin
comes out clean.
